T loves hummus so we’ve tried quite a few recipes, some better than others. I decided to try to create my own recipe with less spices and more garlic – it was a huge hit!
Here’s the recipe below. It’s quick and faff free like most of our food.
T’s Hummus. Ingredients: • 2tsp of tahini paste • 2tbsp of lemon juice • 4tbsp of cold water • 4tbsp of extra virgin olive oil • 2 large cloves of garlic • 1/4 tsp (or tip of tsp) of cumin • 1/4 tsp of paprika • A can of drained and rinsed chickpeas (approx 240g) • A drizzle of olive oil for serving
Method: • Mix the tahini paste and the lemon juice together with a spoon in a food processor. • Add the cold water, olive oil, garlic, cumin, paprika and a small handful of the chickpeas and blend with the food processor until smooth. • Add the rest of the chickpeas and blend until you get the consistency you like, T likes it super smooth but it’s lovely with small chunks of chickpea in the hummus too. • We serve it in a small bowl, the surface smoothed with the back of a spoon and drizzled with olive oil.
